The other day I went on a crazy batch cooking mission, only to realise that I didn’t have enough room in my (pretty giant) chest freezer to store it all. (Note to self...stop cooking all of the time!!) This left me having to remove the less necessary items that I could use up quickly and easily. Besides the millions of ice lollies I didn’t even know we had (where do they all come from?) filling up the bottom of the freezer I found a fair amount of frozen fruit that I thought would be just perfect for smoothies for the next day or so. (Bear with me, it will all link into the frangipane tart in a minute, I promise.)

I set about making smoothies and juices but did not see the big bag of cherries I had left on the counter until later when there was a glorious red juice stretching itself across the kitchen worktop. (Doh!) By this point we were all ‘smoothied’ out and I was stuck with a bag of juicy red cherries with no place to go. My mind then (obviously?) jumped to making a frangipane tart. I have no idea why I thought this as I had never made a frangipane tart before and I hadn’t even had so much as a shop bought one for at least 10 Years. I didn’t even know if it could be made vegan but the cherries called to me and said “Almonds” so I obliged. Frangipane is traditionally a custard filling flavoured or made with almonds, however, being a vegan recipe it goes to say that the lack of egg will mean its less of a custard filling and more of a creamy filling. (Still so good!) Frangipane originated in Italy but has become a firm Christmas tradition in France. You can use frangipane filling in pastries, cakes and baked goods such as Bakewell tarts. (Yum!)

Recipe for a vegan cherry and almond frangipane pastry tart as seen on realfamilyjourney.com This delicious, creamy almond and cherry tart is so simple and impressive. It is great served with vegan single cream or ice cream and is one of those dishes that people simply wouldn’t believe is vegan.

Ingredients - serves 8

  • 1 cup frozen cherries (allow to defrost for a few hours and keep the juice they create)
  • 1 pack of ready roll shortcrust pastry (check its vegan, most are)
  • 300g ground almonds
  • 300g golden caster sugar
  • 200g dairy free butter
  • 2 chia eggs (1 egg = 1 tbs chia seeds + 3 tbs water)
  • 2 tsp vanilla extract
  • 3 tbs plain flour
  • Single (vegan) cream to serve (we used Oatly!)
  • 1 x 9-inch flan/quiche dish
  • You will need to blind bake your pastry. You’ll need some rice, lentils or dried beans for this

Method

  1. Preheat the oven to 425F/Gas mark 7
  2. Grease and flour your shallow dish
  3. Place your pastry inside and mould to the edges. Cut off any excess and use to fill any gaps
  4. Line with baking paper and then fill with your choice of lentils, rice or beans (this is to just weigh down the pastry to stop it from rising on its first bake)
  5. Bake in the oven for 30 minutes removing the paper and weights halfway through
  6. Remove from the oven and allow the pastry to cool
  7. Turn the oven down to 350F/Gas Mark 4
  8. Meanwhile, make up the pie filling
  9. Make up the chia eggs and allow to stand for a few minutes
  10. Cream together the butter, sugar and vanilla
  11. Stir in the chia eggs
  12. Stir in the almonds and flour to create a spreadable paste
  13. Add the filling to your cooled pie crust
  14. Top with your thawed cherries and drizzle on some of the juice
  15. Bake for 45-60 minutes until your filling is set (It will firm a little more on cooling)
  16. If your pie crust edges begin to brown too much then cover them with foil

This turned out so unbelievably delicious. I am ashamed to admit that it was so good in fact that I made it the next day for guests. I seriously ate too much of it that weekend but it is so moreish.

I think you could flavour this dish with any type of fruit and I’ve even seen the recipe made with puff pastry too so it can be pretty versatile.
