I am not a tofu fan. There I said it. I am a vegan and I don’t like tofu. Am I the only one? It does feel like it sometimes. I have tried it in many recipes but I just can’t seem to get past the fact that it doesn’t have enough bite to it. (Please feel free to contact me if you have any pointers!) Ok, so maybe the correct sentence should be I didn’t used to like tofu or more accurately I don’t like tofu when I’m using it as a meat substitute but something glorious has happened to my life recently and that is I have found a freaking awesome tofu scrambled egg recipe! I never really enjoyed scrambled egg when I was pre-vegan but this recipe is simply da bomb!
If you are like me and want to get more tofu into your life for its mega health properties (hello protein!) then this really is the one for you. I have had a play around with this recipes a bit but found that adding the secret ingredient (I’ll get to that bit in a minute!) has made it something so special. So if you fancy a cheeky bit of breakfast in bed or a really quick kids dinner then look no further than my yummy scrummy creamy tofu eggs.
Oh, the secret ingredient? Yes, the fantastic and wondrous ingredient is turmeric. Not only is this little gem perfect for the flavour and colour of this ‘foe’ egg dish but it is also dubbed as one of the healthiest foods in the world. It boasts major anti-inflammatory properties and aids with detoxification. It is also meant to help prevent some of the worst diseases and illnesses out there, support cardiovascular health and help reduce depression. Now you don’t get that with any of your run of the mill eggy breakfast dishes now do you? It really does make the dish a little sunnier. The only problem I have now is that it’s not a secret anymore! This really is a speedy recipe and best of all there is no stuck on ‘eggy’ pan to clean afterwards! I hope this recipe transforms your tofu life as much as it has mine. Until next time lovely people.
Serves: 4 People
- 1 Pack extra firm tofu (approx 400g but smaller is fine)
- 1 tsp turmeric
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp nutritional yeast
- 1 tsp olive oil
- 1 tsp vegan butter
- A good helping of salt and pepper. Whatever your preference
- Drain your tofu and pop into a bow
- Mash it up with the back of a fork until it resembles scrambled egg
- Add all the other ingredients and stir through
- Transfer to a frying pan and gently heat through
- Serve on toast or as part of a breakfast.
- It is amazing topped with fresh chillies or chives.
