Peppermint Crunch Biscuits

Well, this recipe came as a bit of surprise I can tell you. I'm not a fan of mint confection usually but somehow managed to find myself the proud owner of a bottle of peppermint essence. (Long story!) Me being me I hated the idea of any waste so thought I would make a simple treat for the kids and boy, oh boy, was I shocked at how delicious they were. They are simply Christmas in a biscuit. I am now one hell of a peppermint fan. Who knew?

These are so simple to make, making them the perfect bake with little ones. Your home will smell like icy peppermint and you, like me, will now be putting these on the Christmas traditions list. Enjoy!!

Servings 16 sandwiches

Ingredients

Dough

  • 1 cup cashews

  • 1/2 cup butter

  • 1/2 cup caster sugar

  • 1/4 cup cacao

  • 1/2 cup plain flour

Peppermint cream filling

  • 2 tbsp butter

  • 1 cup icing sugar

  • 3/4 tsp barley grass powder for colouring

  • 5-6 drops peppermint essence

Instructions

  1. Blitz up the cashews in a food processor until it becomes a clumpy sand mixture.

  2. Cream together your butter and sugar in a mixing bowl.

  3. Add in your flour, cashews and cacao and combined into a ball of biscuit dough.

  4. Pop into the fridge for a minimum of 30 minutes to prevent the dough from being too sticky.

  5. Meanwhile, make the peppermint filling.

  6. Combine all of your peppermint cream ingredients in a bowl and pop into the fridge ready for use.

  7. Preheat the oven to Gas mark 5/375F

  8. Flour a work surface or a wooden board and turn out your biscuit dough.

  9. Roll out very thinly (3mm thick) and cut out small circle shapes. (Approximately1 1/2 inches.)

  10. Lay your circles onto a lined baking tray and bake for 12 minutes.

  11. Allow to cool fully.

  12. Pop a generous amount of filling in the centre of one of your biscuits. (Leaving space around the edges.)

  13. Sandwich another biscuit on top and squeeze together to allow the filling to reach the edges.

Now, if these last long enough and you want to store any them for later then pop them into an airtight container and they will last for a few days. They will lose some of their crunch but will still be perfectly chewy and delicious.
