Vegan Plum Crumble
This recipe came about from a spell of eating gluten-free and my golly gosh am I happy that we found it. This recipe is the perfect balance of sweet and tart, gooey and crunchy. If you needed a dish to celebrate the beginning of autumn then this is the one for you. Our delicious plum crumble.
I remember as a child having a special treat on a Sunday of a homemade pudding. It would either be trifle, cake or crumble. For those of you who have been following our journey closely, you will note that we have started to veer towards the healthier plant-based recipes recently. We have, however, decided to keep my childhood tradition going strong and have a weekly treat to celebrate the week's end. This was this weeks treat and it transported me back to the days of old. (Not THAT old, but older than I'd care to mention!) You simply wouldn't know that this recipe is dairy and gluten free and I'm very proud to be sharing it with you. I hope it brings you a little nostalgia and comfort too.
So without further ado...
1 kg plums
1/2 cup brown sugar
1/4 cup filtered water
1 cup raisins
1/2 cup dried cranberries
1 cup ground almonds
2 cups gluten-free plain flour
1 cup gluten-free oats
1/4 cup sugar+extra for sprinkling on top
3/4 cups vegan butter
Slice your plums in half and remove the stones.
Pop them with your other fruit filling ingredients on the hob and heat through until thick and fruity.
Meanwhile, in a bowl combine your topping ingredients.
Massage your butter into the dry ingredients until you have a sprinkly crumb texture.
Add your cooked fruit to an oven proof dish and layer on your crumble topping.
Sprinkle with a pinch of sugar and bake in the oven Gas mark 5/375F for 30 minutes or until golden and crisp.
Serve with dairy-free yoghurt, custard or ice cream.
