Triple swirl nice cream

I don’t know who came up with the idea of nice cream but I am jolly well taking my hat off to them! I have tried so many different ways to get Pops to eat a banana and have failed miserably until the joy of nice cream came into our lives.

Our two love this recipe. I can not tell you the look of shock on their faces when I told them they were having ice cream for breakfast one day. They really did think that mummy had finally gone bananas. (Excuse the pun!) No matter if you’re young or old though this little beauty of a dish is really something to write home about. A delicious mix of fruity flavours, a feast for the eyes and the taste buds.

Ingredients

Mango nice cream
  • 1 frozen banana
  • Handful of mango
  • Desiccated coconut to serve
Blueberry nice cream
  • 1 frozen banana
  • Handful of blueberries
  • A dash of dairy-free milk
  • Desiccated coconut to serve
Matcha nice cream
  • 2 frozen bananas
  • 1 tsp matcha powder
  • A dash of dairy-free milk
  • Desiccated coconut to serve

Method

  1. Taking it in turns add all of your ingredients from your chosen flavour and pulse in a food processor until creamy.
  2. Rinse out the blender and continue with your other flavours.
  3. Swirl your nice creams into a bowl and sprinkle with coconut. So simple and so tasty.

You could change the flavours from fruit to chocolate, pistachio or even vanilla by adding any of your favourite things to the banana base. Maybe for adding a little more pizazz you could top with nuts, biscuit crumbs or your favourite treats. We’d love to hear how you like yours.
