Ridiculous Vegan Raspberry & Strawberry Chocolate Cake

One of which is we have a Christmas tea party when we sit down to watch the CBeebies Christmas panto. Now, this is our first vegan Christmas so I wanted to make it extra special and when I asked Fin what he wanted most at the tea party he screamed the words ‘chocolate’ and ‘cake’ at me! (He’s so my son!)
Vegan chocolate cake has not gone so well for me in the past with it usually tasting of coconut, peanuts or being too dry to chew but we have hit the jackpot here. I hadn’t intended to blog this recipe as it was just meant for our quiet tea party but after the reactions from both vegan and non-vegans I felt it would be selfish not to share this awesome recipe. Really, it is truly delicious!
So, as a description so you know what you’re getting yourself into, the bottom half of the cake tastes like Black Forest gateau and the top layer tastes like chocolate fudge cake! What’s not to love? The cake rises beautifully and the sponge tastes of rich chocolate. (Not coconut! Woohoo!) Now, I won’t lie to you this is not a vegan ‘health’ cake. There is not any particular health benefits to any of the ingredients (apart from maybe the cacao powder) but let’s face it, if you’re eating cake then let it be cake. And most importantly no beings were harmed making this fabulous treat so you can enjoy the calories even more! And it’s Christmas so....yay cake!
Apologies for the super short blog post but as previously mentioned this wasn’t on my agenda for today but I wanted you all to have the chance to get a little chocolate heaven this weekend! So here goes...
Ingredients for the cake
  • 300ml non-dairy milk
  • 1 tbsp lemon juice
  • 150 g non-dairy margarine
  • 3 tbsp golden syrup or agave
  • 275 g self-raising flour
  • 175 g granulated sugar
  • 4 tbsp unsweetened cacao powder
  • 1 tsp bicarbonate of soda/baking soda
For the middle of the cake
  • Cherry jam
  • 100g icing sugar
  • 50g non-dairy margarine
  • 1/2 tsp Vanilla
To top the cake
  • 200g icing sugar
  • 75g non-dairy margarine
  • 4 tbs cacao powder
  • 2 tbs water
  • Strawberries
  • Raspberries
  • Snowflake sprinkles (check they are vegan)
Instructions
  1. Preheat the oven to 160c/ gas mark 4
  2. Grease 2 x 8-inch circle baking tins
  3. Heat the golden syrup and margarine in a pan and set aside to cool a little
  4. Mix together the lemon juice and non-dairy milk and pop to one side
  5. Sieve the cacao powder and flour together into a bowl
  6. Add in the granulated sugar and bicarbonate soda and mix well
  7. Mix both wet mixtures into your dry bowl and stir until you have a smooth batter
  8. Spoon the mixture evenly into your two tins and bake in the oven for 30-35 minutes. Check with a skewer that the mixture is baked right through
  9. Allow to cool 10 minutes on a rack and turn out to cool fully
  10. To make the icing for the centre sieve the icing and beat together the ingredients
  11. When the cakes have cooled fully spread cherry jam on one half of the centre piece and vanilla buttercream on the other
  12. Carefully place the two halves together
  13. To make the chocolate icing sieve the icing sugar and cacao powder and beat together with the margarine and water
  14. Spread gently over the top of the cake and decorate with the fruit and sprinkles
