Creamy Banana Oats & Blackberry Compote

As the days grow shorter and the evenings become cooler my attention begins to turn to the more comforting things in life. Steamy bowls of slow-cooked food and thick and textured blankets to snuggle under. Sparkly mood lighting, fluffy socks and a good book by my side. I have been known to spend hours pouring over Pinterest, getting caught up in a world of hygge and spice to celebrate the season change and this year has been no different.

There really is nothing more inviting than a bowl of warm comfort food, however, this year I have set myself the challenge to stay as plant-based as possible. While there are many recipes out there that fit the 'healthy' brief I am craving those oozy, gooey and downright drool-worthy recipes that begin to spring up at this time of year! So, here we have it. The beginning of our Autumn plant-based range. I have put together a large collection of plant-based comfort food for you all to enjoy over the coming seasons to keep you, I and all those other fabulous families out there healthy, happy and as nourished as possible.

Servings 2 people

Ingredients

Porridge

  • 1/2 cup oats

  • 2 small ripe bananas

  • 1/4 cup pumpkin seeds

  • 2-3 cups of dairy-free milk dependant on how thick or loose you like it

  • 1 tbsp maple syrup optional

Compote

  • 150 g blackberries

  • 1/4 cup water

  • 1 tbsp maple syrup optional

Instructions

  1. Pop your blackberries into a saucepan and add your water and maple syrup.

  2. Gently bring to a boil and simmer for approximately 20 minutes. Until all of the blackberries have broken down and then the liquid reduces to a sticky syrup consistency.

  3. To make the banana oats simply mash up your banana and add them and your other ingredients into a fresh pan. (Add your milk 1/2 cup at a time.)

  4. Heat your ingredients together until smooth and creamy.

  5. Add as little or as much of your milk as you like dependant on your prefered texture. I add all 3 cups as I enjoy a very wet porridge.

  6. Portion out your creamy oats into a bowl and spoon over the blackberry compote. Enjoy!

I can't promise you that on the odd occasion there won't be a real treat recipe popping up for you but for the most part, I want to only create nourishing and health-promoting recipes this autumn and winter.
