Ok, so I’m not entirely sure what the rules are for making a Buddha bowl but in our house, it’s code for ‘let’s chuck a load of tasty things that need using up into a bowl!’ I’m pretty confident that they originate as vegan and they lend themselves really well to being filled up with all the lovely rainbow colours that we vegans eat. I’m also sure that they are meant to be small mouthfuls of several different food types for which we did not get the memo. So basically we fill our giant pasta bowls to the brim and feed ourselves until we resemble beach balls! Either way the words Buddha and bowl, when put together, make for a happy dinner time for us.

I love how versatile this tradition is. We like to make ours up with some grains, (couscous/quinoa/rice) some protein, (beans/seeds/houmous) and plenty of fruits and veg both raw and cooked e.g. Kale, mango, avocado or mushrooms. We always serve with a slice of lemon or lime to drizzle over the top and a chunk of wholemeal bread.
Today’s Buddha bowl:
Ingredients
  • Quinoa
  • Kale
  • Mushrooms
  • Red onion
  • Mango
  • Tomatoes
  • Peppers
  • Apple
  • Carrots
  • Chia seeds
  • Sesame seeds
  • Houmous
  • Lemon
We served with wholemeal bread and potato salad.
