Jewelled Banana Bread

Who doesn't love a bit of banana bread? Now, let's take it one step further and make it a jewelled banana bread! Everything tastes better when it's had some extra sparkles thrown at it am I right? The heavenly spices and juicy fruits make this a bread fit for a king.

The molasses and dried fruits make this special loaf full of iron, great for nurturing young growing bodies and grown-ups alike. Enjoy!


  • 3 ripe bananas

  • 1 tsp ground cinnamon

  • 1 tbsp molasses

  • 60g vegan butter

  • 50g soft brown sugar

  • 3 heaped tsp baking powder

  • 220g plain flour

  • 100g walnuts

  • 100g dried mixed fruit


  1. Preheat the oven gas mark 6/400F

  2. Mash up the bananas and mix well with your butter, sugar, molasses, baking powder, walnuts, cinnamon and dried fruit.

  3. Gently sift in your flour until just combined.

  4. Line a loaf tin and pour in your mixture.

  5. Bake for 45 minutes. (Cover with foil if it begins to brown too much.)

Enjoy this bread simply warm and sliced but as an extra treat why not serve it with a little butter, custard or ice cream! Yum, yum, for my tum.
