Servings 4 people Ingredients 1/2 white cabbage 1 red onion 1 apple juice and zest of 1 orange handful dried cranberries handful chopped walnuts season to taste Instructions Chop your cabbage, apple and onion into thin slices. You can use a food processor if you prefer. Add your cranberries walnuts and seasoning. Juice and zest your orange over the top and enjoy! Doughnuts made of vegetables I hear you cry?! It’s crazy, but it’s true! These bad boys have been inspired by a Forks Over Knives recipe which you can find here. They have been adapted to fit even more wonderful veggies in and you will not believe how sticky and delicious they are. Well, this recipe came as a bit of surprise I can tell you. I’m not a fan of mint confection usually but somehow managed to find myself the proud owner of a bottle of peppermint essence. (Long story!) Me being me I hated the idea of any waste so thought I would make a simple treat for the kids and boy, oh boy, was I shocked at how delicious they were. They are simply Christmas in a biscuit. I am now one hell of a peppermint fan. Who knew? These are so simple to make, making them the perfect bake with little ones. Your home will smell like icy peppermint and you, like me, will now be putting these on the Christmas traditions list. Enjoy!! Now, if these last long enough and you want to store any them for later then pop them into an airtight container and they will last for a few days. I never knew how much fun Halloween could be until I realised we could have it on our own terms! As previously mentioned we are not major Halloween fans, partly due to the ‘not wanting to be scared’ feeling and partly because it seems like a lot of money and unhealthy foods all rolled into one stressed out ball. Not to put a downer on it at all! Hahaha!! Or should I say “Mwah ha ha ha!!” This year we have decided to go all in but in a cute, family fun and healthy food kind of a way.
