Fed up with nut roasts? Tofurkey not floating your boat? This my friends is the ultimate vegan Christmas centrepiece and I am beyond excited to share it with you. This will be our second vegan Christmas and I am literally bouncing off the walls with excitement. Not only do I love all things Christmas and therefore I’m in a heightened state of excitement most of November (Note to self…I must try to not put up my tree until December!) anyway but I have been practising this recipe now for some time and it is truly yummy scrummy. Both the kids love it which is a mega win and it feels super special to have something so lovely as the main part of the meal. You can make this beauty ahead and freeze before baking which will save you time on the day. Yay! Simply cook from frozen and a mere 30 minutes later you will be serving up a golden, buttery pastry wreath full of wholesome nutrition to wow your guests. Winner, winner, vegan dinner! Enjoy… Have a fabulous Christmas Fam. Thank you for considering a cruelty free Christmas meal. You have loving hearts for which we are grateful. This […]
I can’t believe that this day has finally come. The day when I can say loud and proud that we’ve written a book. A beautiful cookbook that I can’t wait to share with you all. This book has been a labour of love. Hours and hours have gone into these recipes. From the simple ideas in the beginning to the making and taste testing to get each and every recipe just perfect for you all. I am so grateful to my family for all of their support in the making of this book. Without Daddy Journey, the photos and technical side of things would never have been achieved. Without my amazing and very talented brother, we would never have been able to bring you such a creative piece of writing. My beautiful weegans and my super amazing mum have allowed me to spend hours in the kitchen with no complaints eager to taste test every offering without bias. Without them, our recipes wouldn’t have been through such rigorous testing and have pushed me to strive for the best of the best for you all to enjoy. This book is full of over 50, whole food plant-based recipes. They are all […]
I am about to make one hell of a statement. Brace yourself for this. Are you ready? This is simply… take a deep breath… the best recipe I have ever made. There, the cats out of the bag! Now, I don’t say this lightly, as in my (not so ) humble opinion, I’ve made lots of amazing and very delicious recipes. However, this one is a baby that I am super proud of. This is the recipe that replaces that centre stage item in a Sunday roast or dinner party. It is the recipe that you can eat hot or cold for lunch, dinner or both. It’s the item that everybody loves so much that it’s going to end up wowing our Christmas crowd this year! Yes, it really is that good. Not only is this bad boy the mother of all things vegan delicious, it is also a powerhouse when it comes to packing a nutritional punch and an abundance of protein for you and yours. Loaded with nuts, seeds and whole grains this beauty of a dish will kick any average nut roast to the curb. Come on then, let’s crack on with it. It would be just […]
The best vegan Sandwich in the whole wide world, so there! I am so excited to tell you about this sandwich. It has transformed my vegan life and is simply my most favourite sandwich in the whole world. I have always been a fan of mayonnaise filling sandwiches, especially on crunchy toasted wholemeal bread. (Salivating now!) I used to love tuna mayo, egg mayo, chicken mayo, I think you get the gist. However, truly and honestly, no sandwich I have ever tasted (pre-vegan or otherwise) is this delicious. Now, having this sandwich on toasty bread is my preference but this filling would also work so well as a regular sandwich, wrap or even just as a salad in its own right. It really does take all my strength to not eat the whole bowl before the bread has finished toasting! I’ve kept this as a very relaxed recipe without specific quantiles of each ingredient as I think a sandwich is such a personal thing. I love loads of red onion in mine but Paul only likes a little. Fin can’t get enough gherkins in his sandwich and Pops wants barely any. So here are the basic ingredients and method but […]
Cream cheese and chives I have spent what feels like a lifetime trying to get my little girl to eat cheese. She didn’t like non-vegan cheese before going vegan. (Which I don’t blame her for now!) She hates the smell of shop bought vegan cheese (she has a point) and she’s even turned her nose up at some of my previous homemade cheese recipes. So I guess you’re thinking, leave the poor girl alone and stop trying to make her eat cheese right? I hear you. However, when we are all tucking into a cracker platter or trying to stop her toppings from falling of her pizza I feel the need to find the glue that would help stick her food together. (I’m so not selling this I know but bear with me.) Now, I don’t want to create a cheese for cheese’s sake. For those of you who know me, it’s all about the nutrition so after many tried, tested and failed attempts I have struck gold. Now Pops on the odd occasion used to eat cream cheese so this is where I thought I would start. She also loves houmous and cream cheese is a similar dip style […]
