Mmmm! Print Dark Chocolate Ginger Mochas Spiced hot chocolate is the way to my heart and the coffee in this one adds a special richness to make you feel thoroughly spoilt. Go on, treat yourself! Ingredients 1 cup dairy-free milk We used cashew. 50-75 g dark chocolate Depends on how rich you like it. 1 tbsp molasses 1 tsp vanilla 1 tsp instant coffee You can leave this out for children. 1/2 tsp ground ginger 1/2 tsp ground cinnamon pinch grated nutmeg Instructions Gently heat all of your ingredients in a non-stick pan until smooth and creamy. I can’t believe that this day has finally come. The day when I can say loud and proud that we’ve written a book. A beautiful cookbook that I can’t wait to share with you all. This book has been a labour of love. Hours and hours have gone into these recipes. From the simple ideas in the beginning to the making and taste testing to get each and every recipe just perfect for you all. Some days you just have a random craving right? Well, I do and today it was a craving for iced coffee. Now, that may not seem weird to most of you but let me fill you in. I was a coffee barista for three years and not once in my years of designer coffee making did I ever once feel like taking even a teeny tiny sip of coffee. Don’t get me wrong, I never hated coffee and I had to drink small amounts each day to check the levels in the coffee machines were working correctly but when it came to break-time I would always pour myself I nice cup of tea instead! Sunny Baobab juice We first heard about the baobab tree when we went to visit the Eden Project in Cornwall. We were enjoying the tropical temperatures of the rainforest zone and had the chance to cool down with a vanilla and baobab ice cream. Baobab has a citrusy taste which was so gentle and refreshing. That was the last I thought about baobab for a while until I saw it in a health food shop and thought I’d do a little research to find out what it was all about. I was quite astonished when I realised it was a superfood. Baobab powder comes from the deciduous baobab tree. You can find it in Madagascar, mainland Africa, Arabia, and Australia. In Africa they call it ‘The Tree of life.’ And for good reason too as it has a whole host of nutritious benefits. Dried baobab fruit powder is loaded with antioxidants, especially vitamin C. Ever have those mornings when you feel you have to make a decision between shower or breakfast? I am all for trying to save time in the mornings but never at the expense of breaking my fast, hell no! I hold breakfast on such a high pedestal that I will happily have breakfast for dinner any night of the week. I really do believe the saying that it’s the most important meal of the day. I feel the kids are more experimental with their meals first thing as they are so hungry and with a good filling breakfast to start the day you have all the energy you need to get through the morning to lunch. This year is a special year for us as a family. The last time I was making a birthday spread for my little girl we weren’t vegan. In fact, my little girls birthday cake was the last non-vegan thing I ate. So this year is my daughters 8th birthday but her 1st vegan anniversary. I wanted to celebrate this special day with some of her favourite treats yet keeping it simple so I could still enjoy the day with her and not be tied to the kitchen. She asked me for a grown up girls cake with her most favourite strawberries as the decoration. This small party feast is ideal for both young and old, vegan and non-vegan alike.
