Mmmm! Print Dark Chocolate Ginger Mochas Spiced hot chocolate is the way to my heart and the coffee in this one adds a special richness to make you feel thoroughly spoilt. Go on, treat yourself! Ingredients 1 cup dairy-free milk We used cashew. 50-75 g dark chocolate Depends on how rich you like it. 1 tbsp molasses 1 tsp vanilla 1 tsp instant coffee You can leave this out for children. 1/2 tsp ground ginger 1/2 tsp ground cinnamon pinch grated nutmeg Instructions Gently heat all of your ingredients in a non-stick pan until smooth and creamy. I never knew how much fun Halloween could be until I realised we could have it on our own terms! As previously mentioned we are not major Halloween fans, partly due to the ‘not wanting to be scared’ feeling and partly because it seems like a lot of money and unhealthy foods all rolled into one stressed out ball. Not to put a downer on it at all! Hahaha!! Or should I say “Mwah ha ha ha!!” This year we have decided to go all in but in a cute, family fun and healthy food kind of a way. So, we have our games evening planned, we are working on our decorations (watch this space) and today we turned our attention to what we were going to eat. Hello, hello, hello! How are you all? I hope you’re all having a fantastic summer loaded with lots of lovely family time and adventures in the great outdoors. Today’s blog post is a bit of a lazy hazy summer daze kind of a post. We have just got back from an amazing family holiday but the camping meant that we have been seriously deprived of homemade cake. We are still yet to unpack, I have a pile of washing that would make the hardiest of mums cringe and now my kitchen looks like a chocolate hurricane has hit it but I didn’t want to wait a second longer before sharing this treat with you guys. This sponge recipe is officially the lightest cake recipe I have ever made. Even before going vegan I have never produced such a melt in the mouth cupcake and I’m feeling blooming proud of myself right now! We used fennel infused honey for this recipe but it is so subtle against the chocolate and banana that I am completely confident that this will work exceptionally well with regular vegan honey also.
