There is nothing I love more than a beautiful bowl of comfort food at this time of year. Those of you who know me know that my favourite meal in the world is our lemon kale pasta broth but I have to tell you, my friends, that this dish has rivalled it. Boasting the same nutritional benefits and offering the ‘hug in a bowl’ effect I can now proudly say that I have two favourite dishes. I can’t believe that this day has finally come. The day when I can say loud and proud that we’ve written a book. A beautiful cookbook that I can’t wait to share with you all. I love this miso noodle soup!! It is full of goodness and it is one super (I refrained from saying souper) speedy recipe. There is something about broth style soups that give you that ‘feel good’ factor. They feel nourishing and comforting. Perfect for when you need a great big food hug! This was a bit of an experiment for me really as I had just bought some miso because I had heard it’s something us vegans should eat but I had never tried it before. Miso is a paste made from fermented soya beans and it’s a great source of iron, calcium, potassium, B vitamins and protein. After I did a little research I soon realised that miso was perfect for soups so I set about trying out a few recipes. I wasn’t sure if the kids would go for one with so many green veggies but sometimes you just have to use what you have am I right? I couldn’t have been more wrong though as the kids loved it! This soup recipe came about from a craving for minestrone soup and a lack of ingredients in the house! You know those days when you look in the fridge and it looks full yet seems to be full of items that don’t really go together? So, you try out a new recipe on the family. Sometimes it’s a winner and sometimes it’s really not. (Sorry fam!) Well, this one is a true winner and in fact, I can boldly say it is my new favourite thing to eat in the whole wide world. (Apart from cashew butter and bananas, obviously!) This soup is so rich and full of so many different textures. I am by far more of a broth soup kind of a girl. It feels more like a meal than a creamy soup does. This gem of a recipe is absolutely jam-packed with nutrients, I always enjoy my food more when I know it’s good for me too.
