Good morning lovely people! Today I am sharing a super speedy recipe and blog post. I have had lots of people connect with me since we released our creamy banana oats and blackberry compote recipe. Many of you are lucky enough to have a great supply of blackberries to use up and you’ve been asking for another simple blackberry recipe. So, here we have it. A super simple, delicious and nutritious blackberry granola recipe.
- 2 cups rolled oats
- 1/2 cup chopped walnuts
- 1/4 cup pumpkin seeds
- 1/4 cup dried cranberries
- 1/2 cup tahini
- 2 tbsp maple syrup
- 150 g fresh blackberries
- Milk or yoghurt to serve
Preheat the oven Gas mark 5/375F
In a heavy bottomed pan gently heat the tahini and maple syrup until silky and combined.
Chop up your nuts with a food processor or pestle and mortar into small chunks.
In a large bowl mix together your oats, chopped nuts, seeds, dried fruit and tahini mixture.
Pour into an ovenproof pan and bake for 20 minutes or until golden. (It will crisp up further on cooling.)
Serve with ample amounts of juicy, plump blackberries and your choice of milk or yoghurt. Enjoy!
