🎶Red and yellow and pink and green, purple and orange and blue…🎶
OK, so it doesn’t contain anything blue but when you see this beautiful dish simmering away in front of you, you will really see the rainbow in it.
Now, we all know that its great to eat the rainbow. Flooding your body with a whole host of different vitamins and minerals from all of the different coloured foods. This bowl, however, taste like you’ve struck gold at the end of the rainbow too. It is so rich in flavour and texture, it is a real feast for the taste buds as well as the eyes. The gentle heat balances with the creamy coconut. The fragrant ginger works perfectly with the fresh green coriander. Everything in this bowl works so perfectly to leave you with a steaming bowl of ‘feel good’ that the whole family will enjoy.
One Pot Rainbow Curry
This bowl tastes like you've struck gold at the end of the rainbow!
- 3 small sweet potatoes
- 1 large handful black kale
- 1 courgette
- 1 red chilli
- 1 x 400g tin coconut milk
- 1 x 400g tin chickpeas
- 1 x 2cm piece fresh ginger
- 2 cloves garlic
- 1 red onion
- 1 yellow pepper
- 1 red pepper
- 1 handful green beans
- 1 handful baby corn
- 1 handful asparagus
- 1 tsp garam masala
- 1 tsp turmeric
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
- 1/2 tsp mustard seeds
- 3/4 pint vegetable stock cube
- a few tbsp filtered water
Soften your onion, garlic and ginger in a couple of tbsp of water.
Chop and add your peeled potato, pepper, courgette, corn, green beans and asparagus and add to your pan along with a few more tablespoons of water and allow to soften for 5 minutes.
Grind your spices in a pestle and mortar and add to the pan along with your stock and coconut milk.
Simmer gently with the lid on for approximately 25 minutes or until your potatoes are soft and begin to break when you stir.
Add your Kale in for the final 5 minutes. (We blitz ours up in the food processor as it is easier for the kids to chew but this is optional.)
Stir through your drained chickpeas before serving.
Enjoy as a one pot meal or serve with rice or crusty bread.
