These cupcakes are an adaption of our vegan Christmas cake and are so delicious you’ll be singing jingle bells for the rest of the day! Full of delicious spices and plenty of nutrient-rich ingredients this festive recipe is a real treat for any Christmas bash. Enjoy!!
Mini Vegan Christmas Cupcakes
- 450 g dried fruit mix
- 60 g glacé cherries
- 85 ml cold tea or chosen alcohol
- Zest of one lemon
- Zest and juice of 1 orange
- 50 g citrus peel
- 175 g vegan butter
- 175 g light brown sugar
- 1 tbs molasses
- 4 flax eggs 1 egg = 1 tbs flax meal + 2.5tbs water
- 175 g self-raising flour
- 2 tsp baking powder
- 50 g ground almonds
- 60 g chopped walnuts
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- Ready rolled marzipan
- Ready rolled white icing
- Apricot jam
You will need a muffin baking tray and cases as well as cookie cutters both round and star.
Pop your dried fruit, cherries and citrus peel into a bowl.
Remove the zest from your orange and lemon with a fine grater and squeeze the juices and pour over your dried fruits.
Pour in your tea (or alcohol) and cover in cling film and soak for a minimum of an hour or overnight.
Preheat the oven to Gas mark 4/350F and line your baking tray with your cake cases.
Make up your flax eggs and set aside.
Beat together your butter, sugar and molasses until light and fluffy.
Add in the flax eggs a bit at a time making sure each addition is carefully mixed in before adding more.
Grab another bowl for your dry ingredients and add in the flour, baking powder, almonds, cinnamon, ginger and cloves. Stir thoroughly.
Fold the dry ingredients into the butter mixture until well combined.
Add the walnuts and soaked fruit and gently combine.
Pour the mixture into your prepared cake cases and smooth out the tops with the back of a spoon.
Bake in the centre of the oven for approximately 30 minutes or until springy to touch.
Once cooled melt a couple of tablespoons of jam in a saucepan.
Cut out your choice of circles and stars from both the marzipan and the icing. (It’s up to you how you choose to mix and match them.) and ‘glue’ them in place with your jam and a pastry brush.
