Some days you just have a random craving right? Well, I do and today it was a craving for iced coffee. Now, that may not seem weird to most of you but let me fill you in. I was a coffee barista for three years and not once in my years of designer coffee making did I ever once feel like taking even a teeny tiny sip of coffee. Don’t get me wrong, I never hated coffee and I had to drink small amounts each day to check the levels in the coffee machines were working correctly but when it came to break-time I would always pour myself I nice cup of tea instead! So, now you see how completely bizarre it was that I had an uber craving for an iced coffee?!
I have made hundreds of iced coffees during my time at the coffee shop but they were always made with dairy milk (this was before we went vegan) and usually loaded with a shot or two of syrup. This time around I obviously wanted to make a vegan iced coffee and I only wanted to use whole plant foods too. A treat made from plants! So, I followed my tastebuds and decided to build this mega delicious almond and maple iced latte. It is so simple to make and as with all of our recipes, they are a great jumping off point for you to create your own flavours by using our recipe as a guide. Now, with this recipe, we use decaffeinated coffee as we are not big caffeine goers in general but feel free to use any type of coffee you desire. You can also use filtered coffee if you prefer. One espresso shot will be equal to the instant serving that we use in this recipe. We use a blender in this recipe which helps create the creamy, frothy top but you could just pour the other ingredients over ice if you prefer.
Ingredients (Serves 1)
- 1 cup of unsweetened almond milk
- 1 tbsp maple syrup
- 1 tsp instant decaffeinated coffee
- handful of ice
- This is the blender we used
- Pop one teaspoon of instant decaffeinated coffee into your chosen glass and pour over a very small amount of boiling water. Just enough to dissolve to coffee granules.
- Add the milk, maple syrup and ice into your blender and blend until the ice is crushed and you have a nice frothy and creamy latte style top.
- Pour the creamy milk over the coffee and enjoy!
This has now become a firm favourite in our family. It’s a nutritious and cooling beverage to enjoy throughout the summer and beyond. We shake it up for the kids and blend cacao powder into the drink instead of the coffee too. And as an added bonus these drinks freeze great so you can enjoy coffee or chocolate ice lollies as well~.
