This is my second attempt at a chia seed pudding and quite frankly they couldn’t have turned out more differently! Now, the first one wasn’t horrible but I have clearly come a long way in the making of this dish. (Even us well practised chefs make mistakes!)
Chia seeds are really quite magical. They start out as small dry seeds and by adding liquid they turn into gelatinous balls making them perfect as a binding agent in recipes. They don’t really hold any flavour which makes them super versatile and if all that’s not enough they are little powerhouses in the world of nutrition too!
What are the benefits of chia seeds? They are a fantastic source of plant-based omega 3 fatty acids. They are very rich in fibre, iron, antioxidants and calcium. This is our main reason for using them as they are so easy to sneak into dishes for the kids to support their bone health. (Always make sure to avoid giving dry chia seeds to children as they can pose a choking risk. Soak them first.)
The best part about this recipe is how versatile you can make it. I have chosen our families favourite fruits but you could literally flavour this with any fruits, cocoa powder, nut butter or even add a hint of chilli!
We served ours in a selection of recycled jars so that you can see the pudding through glass sides. It is a very impressive dessert, the kids faces light up when I walk in with this knickerbocker style pud in hand. You should see their faces when I say we can have it for breakfast too! And why not as it is loaded with all the good stuff. Fruit, seeds and coconut. This jar of happiness is super hydrating and full of vitamins and minerals so it doesn’t matter if you have it for breakfast, lunch, dinner or all of them!
Cheery Chia Pud
Ingredients/Equipment: serves 4
- Glass jars and wooden spoons to serve.
For the pudding
- 5 tbsp chia seeds (we used these)
- 1 cup water
- 2 frozen bananas
- 1 ripe mango
- 1 tbsp maple syrup (we use this one)
- Handful of blueberries
- Handful strawberries
- Sprinkle of desiccated coconut
- 4 tbsp plain soya yoghurt
- Drizzle maple syrup
- Soak your chia seeds in the water (use filtered water if you can) for a few hours or overnight.
- Before serving blend the frozen bananas and mango and stir through the chia seed mix and maple syrup.
- Add your toppings and enjoy!
