Well, this recipe came as a bit of surprise I can tell you. I’m not a fan of mint confection usually but somehow managed to find myself the proud owner of a bottle of peppermint essence. (Long story!) Me being me I hated the idea of any waste so thought I would make a simple treat for the kids and boy, oh boy, was I shocked at how delicious they were. They are simply Christmas in a biscuit. I am now one hell of a peppermint fan. Who knew? These are so simple to make, making them the perfect bake with little ones. Your home will smell like icy peppermint and you, like me, will now be putting these on the Christmas traditions list. Enjoy!! Now, if these last long enough and you want to store any them for later then pop them into an airtight container and they will last for a few days. I have just discovered agar agar! Why did no one tell me about this sooner? It has literally changed my life. For those of you who are still in the dark about this amazing wonder ingredient, agar agar is a natural vegetable gelatin. It is made from seaweed, in specific red sea algae and is even considered a health food by many. Agar contains no calories, no sugar, no carbohydrates and no fat. It is free from dairy, eggs, corn, wheat, gluten and starch and is deemed a great source of calcium and iron too. What more can a girl ask for am I right? However, the most important thing that you need to know about this magic powder is that it sets things! It sets foods firm and now I am able to make plant-based jellies, cheeses, jams and even gummy bears! Woohoo!! Today’s book project idea has a spooky Halloween theme based on the Jampires book by Sarah McIntyre & David O’Connell . I have been desperate to create a craft for this book for some time but knew it would be a lovely add on to the Halloween crafts we are working on. I’m so glad I held out. This lovely book is riddled with rhyming words and beautiful pictures of sugary lands. It conjures up a real sense of magic and is a lovely way to take the fear out of the idea of vampires. Both the kids loved the thought that Jampires live in a world of sweet treats and it really helped set the tone for the following craft. All that talk of sherbet snow and jam tarts growing like flowers meant I was met with squeals of excitement at making our own jammy goodness in the kitchen. I spent some time thinking about what craft to run alongside this story. I knew I wanted it to be a cooking craft but I was leaning every which way when it came to which recipe. I never knew how much fun Halloween could be until I realised we could have it on our own terms! As previously mentioned we are not major Halloween fans, partly due to the ‘not wanting to be scared’ feeling and partly because it seems like a lot of money and unhealthy foods all rolled into one stressed out ball. Not to put a downer on it at all! Hahaha!! Or should I say “Mwah ha ha ha!!” This year we have decided to go all in but in a cute, family fun and healthy food kind of a way. So, we have our games evening planned, we are working on our decorations (watch this space) and today we turned our attention to what we were going to eat.
