Today I’m dropping you a super speedy recipe and a super speedy blog post. This gem of a recipe has become our weegans favourite side dish to dip pretty much everything into. Great for sharing platters, in sandwiches or even spooned into a warm buttery jacket potato. This little number will make you feel all the festive feels of this wondrous time of year. I have been putting off making vegan cheese for a while now. Partly because I’m not a huge fan of the shop bought vegan cheese and partly because I assumed it would be super difficult to make. I was so wrong. This was one of the simplest recipes I’ve ever made and it set beautifully within 2 hours of making it. I was blown away by the taste of this cheese and even my super fussy weegan who hates anything resembling cheese has declared she loves it! The texture is so creamy. It slices like real cheese but can be spread like a cream cheese. It is smoky, salty and a perfect accompaniment to crackers and chutney. This will be our go-to party dish over the festive period. We were spoilt this week by a very generous family member giving us a giant crate of plums. Food really is my favourite present to get. After I got Daddy Journey to do all of the preparation for me. By this I mean making sure there were no animals hiding out in our vegan crate of food and allowing him the laborious task of washing, halving and de-stoning the fruit, it was then down to me to bring the magic of these fruits to life! Just looking at them got my autumn creative juices flowing and after popping out the obvious crumble and tart I turned my attention to a recipe I had been meaning to do for some time. This recipe does what it says on the tin. Two for the price of one, buy one get one free or however you want to say it. This recipe can be used in two different ways depending on how you cook it. If you cook it for a short period of time you have a barbecue glaze/marinade and if you cook it for longer you have a barbecue table sauce. Winner, winner, vegan barbecue dinner huh?! Okay dokey karaoke lets not beat around the bush today. Let’s crack straight on with it. If you are making a large batch of this to keep in the fridge then these are the glass bottles and jars that we use for storing. Make sure you sterilise any jars fully before decanting though. Correctly sterilised and refrigerated they should be fine to store for a couple of months but once opened use up within 5 days. Cream cheese and chives I have spent what feels like a lifetime trying to get my little girl to eat cheese. She didn’t like non-vegan cheese before going vegan. (Which I don’t blame her for now!) She hates the smell of shop bought vegan cheese (she has a point) and she’s even turned her nose up at some of my previous homemade cheese recipes. So I guess you’re thinking, leave the poor girl alone and stop trying to make her eat cheese right? I hear you.
