I have to be honest. I had a craving at a quarter to midnight last night and you’re now looking at the results. Now, I try and be healthy as much as I can and no, I don’t believe eating cake in the middle of the night comes under the bracket of ‘healthy’ but sometimes the urge just gets too great. And do you know what? I’m not going to beat myself up about it because it doesn’t happen every night and because these are so incredibly delicious I can’t think past the maple, pumpkin and gooey date taste in my mouth. So there! I was clearly in the mood for cake but I thought if I hide it under the guise of wanting to make breakfast muffins as a treat for the kids then hubby wouldn’t mind getting the camera equipment out for an impromptu midnight photo session of our treats and wares. This year is a special year for us as a family. The last time I was making a birthday spread for my little girl we weren’t vegan. In fact, my little girls birthday cake was the last non-vegan thing I ate. So this year is my daughters 8th birthday but her 1st vegan anniversary. I wanted to celebrate this special day with some of her favourite treats yet keeping it simple so I could still enjoy the day with her and not be tied to the kitchen. She asked me for a grown up girls cake with her most favourite strawberries as the decoration. This small party feast is ideal for both young and old, vegan and non-vegan alike. Every year my mini ones and I have several Christmas traditions to mark the run-up to the big day. One of which is we have a Christmas tea party when we sit down to watch the CBeebies Christmas panto. Now, this is our first vegan Christmas so I wanted to make it extra special and when I asked Fin what he wanted most at the tea party he screamed the words ‘chocolate’ and ‘cake’ at me! (He’s so my son!) Vegan chocolate cake has not gone so well for me in the past with it usually tasting of coconut, peanuts or being too dry to chew but we have hit the jackpot here. Is it a cake or is it bread? It is an ongoing debate in our household. I’m still firmly in the outnumbered camp as it appears Pops, fin and even my own mother (shame on you) are sticking to their guns and calling it cake. So I guess you guys are just going to have to make it for yourselves and then you can let me know. This recipe has been inspired by a recipe that I found in the Go Vegan cookbook however, we tweaked the original recipe to suit our taste preferences.
