This recipe came about completely by accident but oh my word I am sooo happy it did! On the run-up to Christmas (which starts in about September for me as I’m the crazy Christmas lady), it dawned on me that the kids and I had been making a few too many sweet treats. So I wanted to set a savoury challenge for the kids and get them involved with some inspiring and tasty ingredients. It was a toss-up between Indian and Thai food and since we couldn’t make up our minds we decided to do two recipes. Ok, so these were made with the kids with the view that they would make great lunchbox/picnic snacks but as I ate a great deal (most…ahem) myself I can honestly say these deserve a place both in the kid’s recipes section and ours. They have been such a hit with our ‘fussy’ child that I’m asked on a daily basis ‘when can we have the korma pasties again mummy?’ These are a very mild introduction to Indian spices for your little ones but if you’re planning on making a few extra for the spice fans in your life then feel free to add as much curry paste as you wish to this dish. This is a really easy recipe for your little ones to get involved in. All of the ingredients are very soft for chopping and it would be very hard to make any mistakes during any element of this process. Both of our two just love cooking. Quite often I will be in the kitchen preparing breakfast or lunch and a little head will pop around the corner and say “Mummy, can I help please?” I think it’s so important to involve children with cooking from a very young age but I feel it has become even more important since becoming vegan. I think it really helps them to learn about the new foods they are trying and the beauty and vast array of plants we now eat. For example, if I expect them to drink a green smoothie, then it helps them to know that actually, the smoothie is full of mango and orange as well as spinach and wheatgrass. That way they know that their drink is going to taste sweet and not like blitzed up broccoli. (Yes, I have mistakenly made broccoli smoothies before. Don’t do it. Please don’t do it.) So it’s that time of year when Halloween and bonfire night fills the shops with crazy sugar-filled treats. Candied ‘this’ and popping ‘that’ and an innocent trip to the shops turns into you being ‘mean mummy’ and saying no to that bright pink apple covered with goodness only knows for the third and final time!…and breathe. So, this year I took matters into my own hands and on stepping across the supermarket threshold I uttered the words “Who want to make some chocolate apples when we get home?” To deafening sounds of “ME!!” I smugly set about asking the kids to pick their favourite apples, dark chocolate and sprinkles and avoided the “I wants” of previous years. It goes without saying that apples are healthy but did you know there is an array of health benefits in dark chocolate also? Dark chocolate is a great source of magnesium and Iron which is great for growing busy little bodies. It is also a great source of antioxidant to help keep those snotty noses at bay. Ingredients 2 tbs crunchy peanut butter 6 pitted dates 1 cup dried apricots Half cup pumpkin seeds 1 cup flaked almonds Half cup dried cranberries 1 cup hemp seeds 1 cup oats 5 Brazil nuts Instructions Blitz all of the ingredients in your grinder until they move around the bowl in one sticky mass.You may need to blend in two batches depending on the size of your grinder Portion and roll into balls If you don’t eat them all in one sitting (not advisable!) they will keep in an airtight container for up to a week. I am so happy to be writing out this recipe for you all. Not only because it is super yummy delicious but also because it’s our Pops first recipe on the blog. Yay! Go Pops! This recipe came about after several failed attempts at getting Pops to enjoy a green smoothie. Bless her, she drank the ones she didn’t like but I wanted to find a green smoothie that she really loved. So I thought what better way to find a recipe than to get her to design one herself. I am ashamed to admit this as I’m meant to be the brains behind the recipes but this truly is the most delicious green smoothie I have ever had. Now admittedly it doesn’t have large amounts of broccoli or kale in it but it is jam-packed with goodness and she has drunk a large jar of this smoothie every day for the last week and has enjoyed every last drop!
